Enjoy carefully selected seasonal ingredients from Niigata and Sado to your heart’s content. Our seafood comes direct from Sado’s Ryotsu Port, so it reaches us a day faster than if it had been purchased in the Niigata market. Fresh fish caught that morning are served on the dinner table. We also use locally-grown vegetables sourced from Niigata farmers, Niigata-raised beef, pork, and poultry, and local sake from Sado’s 5 sake brewers and others. You can feel the deep connection to Niigata life in everything we serve.
